As I understand it this is a deficiency (among many) of the OSX VNC
server, not the VNC clients? I switched to using the Vine VNC Server on
my Macs and with iSSH and it does drop down to 256 colours.
I think http://www.testplant.com/downloads/VineServer.dmg is the right
link to download it, but I'm sure Google can help if not (it's free, so
it shouldn't be too hard to find).

I think if you tap on the little icon of cursor keys at the bottom
right, then flick the cursor keys you'll flip through 4 pages of special
keys and actions.

I have two Macs each with 1920x1080 displays and iSSH is about the only
way I interact with one of them, and a is regular method of interaction
with the other. They both run Snow Leotard, but I interacted with them
exactly the same with old Leopard. It sucks that the default VNC server
in OSX is awful, but I guess it's just not a priority for them, or not
profitable enough or something typically Apple.
