I've never really tried the iSSH tunneling, but I would assume that
while you have an ssh connection open, the iPhone Mail app would be able
to use the tunnels like any other TCP socket-using app.

FWIW stunnel isn't an ssh tunnel, it's a daemon that lets you expose
another daemon via SSL:

[dbmail]<->[stunnel]<->{internet}<->[iPhone]

so you would run it on your mail server and open the IMAPS port, then
configure the Mail app to connect to it using IMAP+SSL. It's up to you
really, there are benefits to only having ssh listening on the Internet :)
