Get thyself a bluetooth keyboard. Any HID compliant bluetooth
keyboard should work fine with the iPad. I snarfed an iGo stowaway bt
keyboard that is a perfect travel keyboard for the iPad. When you use
a bluetooth keyboard, the on-screen keyboard does not show so you have
all that wondeful screen real estate for your vnc, X11, or ssh
session.

In fact, I was using my bt keyboard this morning at 4am when I got
called by work to fix a problem. Worked great!
