X11 itself is just a display method, so without opening any clients
you'll just see the default weave background (I'm guessing that's what
you're seeing when you say "grainy desktop"). If you've got X11
forwarding working on the computer system to which you've connected
(I'll let you read some of the how-tos on that), type in "xterm" after
you to connect to the system with iSSH, and when you go back to the
X11 display, there should be a window sitting on that "grainy desktop".

Gnome is a window manager and a set of applications and behaviors that
sit on top of X11. You may be able to start some of that stuff and
display it on the iPhone, but I don't know how it would behave in the
absence of a typical mouse. If a simple test like 'xterm' works, you
might be able to try running 'gnome-session' and see how it works.
I'm guessing that this is going to be a bit much for the iPhone to
manage, but maybe on the iPad it would be a good thing (?).
