This is a common request and one I am not ignoring.
In another thread I explained one reason. There's another reason that
I can't fill the screen. When I scale the fonts I must do so
proportionally (i.e, apply the same zoom factor to the width and the
height). Not doing so would result in squished or otherwise even
harder to read small fonts on a screen. Keeping the fonts
proportional means that at 1:1 there's a bit on the bottom of the
screen in landscape that can't be used for aspect ration reasons. In
portrait, my choice to simply not allow dismissing the keyboard is one
of font rendering speed (soon to be resolved by 3.2!)
Your request has not gone unnoticed, however. I am doing what I can
to increase what landscape I can had. The recent (4.1) version made
the toolbar dismissible. This means I gained 22 pixels from the top
of the screen to better render fonts more proportionately.
