Instead of subtasks and a project, can you use tasks and a list or tag to get what you want?  It seems like those are a better fit for the activities that you're modeling.

This is why one would want to do this: let's say I have a project that
represents a kind of general task that I need to accomplish every day.
Something like "Shopping" or "Work". Each project would have a number
of specific subtasks that, once completed, don't come back as
uncompleted. For example: "Buy shoes" or "Buy stereo". Let's say I buy
those shoes and check that task off as completed. After finishing
shopping for day, I'd like to check off "Shopping" but have the
project reappear the next day. However, I want the "Buy shoes" task to
remain as "completed".

Does this make sense?
