Thank you for your feature request.  So if we understand correctly you want the subtask which you mark as completed to be repeated with the parent task and remain marked as completed as an option?  Please let us know.

I imagine there is no way to get the behavior I want (be able to
complete subtasks within a repeating project) unless I delete the
subtask entirely when I've completed it?
